Bobal
The Bobal grape variety is the quintessential native area Utiel, Valencia. The Bobal has among its main features high productivity (many clusters and large) and high levels of acidity and polyphenols. For many years, these properties made it ideal for the production of bulk improvers were exported through the port of Grau tank or traveled in other wine regions in the rest of Spain.
Sarrión Toni decided to change the traditional use of this variety and after a thorough study looking at low yields Mustiguillo cellar for optimum quality appropriate to their idea of great wines.
We had to go a different way if we wanted to really reach a result different, so we developed new methods and techniques for working with Bobal in the vineyard and the winery. We have experienced and we have been wrong several times ... but we were right.
